Healthy Fish Tacos

2 pieces of Mahi Mahi or other white fish, drizzle with olive oil, sprinkle with cumin and a squeeze of fresh lime, and set aside. 

1 red bell pepper sliced into quarters               2 slices of onion                                             4 corn tortillas, warmed on the grill, barbecue or stove                                                       cilantro and lettuce 

Grill fish, red pepper and onion on an indoor grill or outdoor barbecue until done.  Slice the fish, red peppers and onions into strips. Serve on top of warm corn tortillas and top with lettuce and cilantro. 

Serve with a side vegetable.  Greens pictured above were sautéed in a teaspoon of olive oil and a tablespoon of water. 

Optional serving ideas: top tacos with sliced avocado and salsa. Additional side dish options: jicama, carrots, watermelon, mango, brown rice, quinoa, or whole pinto or black beans.
